Dairy-Free Buttermilk Waffles
Waffles have long been a staple of mine. As a young adult I'd host Waffle Parties - I'd make the batter, everyone else would bring toppings and games and come ready to socialize and relax. As a mama, these are something we look forward to on weekends and school breaks. And sometimes I make double or triple batches to freeze and use throughout the. week. I never use a mix - I honestly have never met a pancake/waffle mix I've actually liked. Kodiak makes an ok one, but it's still not great in my book. I always make my waffles and pancakes from scratch.
Naturally, I was worried a DF recipe wouldn't be that great. While it is a little different, it is also SO GOOD and satisfies our cravings!
I have a classic waffle recipe and this buttermilk recipe- both are amazing, and the main keys are to use lemon juice for the buttermilk sub and to let any waffle batter bake a little extra so it's crispy on the outside and fluffy on the inside - cue all the heart eyes! These are also FANTASTIC with fresh blueberries folded into the batter!
Later on I'll be trying out my favorite Belgian Waffle mix with DF subs, as well as a few other waffle recipes (stay tuned!).

Dairy Free Buttermilk Waffles
You will need:
Large mixing bowl | medium mixing bowl | whisk | measuring glass | waffle iron
Ingredients
Single Batch:
1 3/4 C flour
1/8 C sugar
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
2 eggs
2 c buttermilk*
1/2 c oil or melted butter
1 tsp vanilla
Optional: 1/2 C fresh fruit
*2 Tbsp lemon juice in a measuring glass, fill to 2 c line with DF milk
Double Batch:
3 1/2 C flour
1/4 C sugar
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
4 eggs
4 C buttermilk*
1 C oil or melted butter
2 tsp vanilla
Optional: 1 C fresh fruit
*4 Tbsp lemon juice in a measuring glass, fill to 2 c line with DF milk
Directions:
In a medium or large bowl, combine dry ingredients. Make a well in the center.
In a small or medium bowl, combine wet ingredients.
Add wet into dry, stir until just combined.
Bake on waffle iron.
