Favorite Recipe Links

 I haven’t kept this blog very updated lately, but I have still been trying a lot of new recipes, making up my own, and making some favorites on repeat. I've been meaning to slowly update this again!

I've also wanted make a post linking some of my family’s favorite recipes we’ve gotten from other bloggers and recipe developers. The ones that need little to no tweaking- include any of my own notes under the links (:


First up is 

Chocolate Cake in a Mug from The Pioneer Woman

She was my go-to for recipes in college, whether I am making it exactly out looking for some inspiration. I love her Cake in a Mug recipe when I just need something. My husband will tell you it isn't exactly a quick recipe haha but it does make just the right amount!


Next up is my favorite recipe developer and blogger:

The Dizzy Cook

She is all-around amazing- if you have migraine disorder, definitely check her out. She has thorough and accessible information, she’s done so much work so that others don’t have to, she creates gourmet and delicious recipes that take 30 min or less and are migraine friendly- and she is a mom! I just love her. She has recipes for literally every occasion, from the usual 3 meals to snacks, mocktails, smoothies, desserts, and appetizers! We have tried and loved many of her recipes, and plan to try many more. I will be listing the ones we keep in our rotation. 


Boursin Chicken

The ultimate comfort food! We especially love it with quinoa and green beans as sides.

Very few notes here:

  • I use boneless skinless chicken thighs, so I don’t need to pound them out.
  • I mix salt and pepper into my flour rather than seasoning the chicken first.
  • I love to add finely chopped kale or spinach as the shallots are finishing, but it isn’t necessary to.
  • I can tolerate chicken broth, so we use regular or bone broth.

 

Dutch Oven Pot Roast

Prior to her recipe I had no idea anyone used wine to make pot roast lol and as she mentions the mixture of pear juice and vinegar may sound off-putting, but this recipe is AMAZING. Seriously. Every time!

Notes: 

  • I use beef broth, I can tolerate store bought,
  • I use dried herbs if I don’t have fresh- but trust me, it's worth finding them fresh!

 

Mongolian Beef 

Oh-so good!! We love this with asian noodles or rice, and some veggies on the side.

Notes:

  • I don't have a grill.. so I pan sear it, or slice and stir fry it.


Next up is a single favorite recipe:

White Chicken Chili from the Chunky Chef

Friends of ours brought this to us once when we were sick, and it is SO GOOD. I still made it when we were dairy-free too! 

Notes:
  • I double the veggies and beans, because I like it thick and hearty. Sometimes I sauté half the corn with the onions.
  • I usually use mild chilis and omit the cayenne since we have a toddler who isn't fond of spice yet.
  • I do not add the cream cheese or heavy cream. We add sour cream and shredded cheese to our own bowls as desired.
  • If making it DF, it can be good with DF cream cheese added.
  • We always have fresh limes to squeeze in, and avocado to dice and add in. Some of us love cilantro as well, and we will either make our favorite homemade cornbread to go with it or we will eat it with tortilla chips.

And last but not least, 

Damn Delicious' Korean Beef Bowls

These are delicious. I remember finding a DF/SF specific recipe on an instagram account a few years ago, but I can't recall the exact account name so I use this as a guide. It's a quick and easy meal that everyone loves! We serve it with rice and green beans.

Notes:

  • I cut back on the pepper flakes for the toddler
  • I use coconut aminos instead of soy sauce
