Fish Tacos with Spicy Slaw

This recipe takes a little longer than I would normally like for a quick dinner, due to the extra dishes from breading it, BUT I'd say it's still pretty easy and quick to pull together, and it's a hit with my kids. Well, my 4.5 yo doesn't like the "big chunks of fish" but says the rest of it is great haha.

I buy a bag of frozen tilapia filets from Costco once in a while, and we work them into our dinners over the next few months. Typically we will make 2, maybe 3, filets for a meal, and each meal is intended to last for at least 2 nights. For the slaw, I taste test and eyeball the spice, so these measurements may not be exact. You might want more!

We also use Costco's raw tortillas (the pre-made tortillas always make us sick), and I highly recommend them!! And we round out the meal with fresh fruits and veggies. Usually with these tacos we'll do fresh citrus, melon, or cucumber.

Fish Tacos with Spicy Slaw


You will need:

medium bowl  |  large shallow dish  |  frying pan


Ingredients:


Slaw:

  • 3 limes

  • ¾ C Soy-free mayonnaise 

  • 1-1.5 tsp chipotle chili powder

  • 1 tsp minced garlic or ¼ tsp garlic powder

  • 1 bag coleslaw


Optional:

  • Sliced green onions


Fish

  • 1 lb tilapia filets

  • ⅓ cup flour

  • 1 tsp chipotle chili powder 

  • ½ tsp salt

  • 2 Tbsp canola oil for frying


Tortillas

  • 8 Tortilla Fresca Uncooked Flour Tortillas


Directions:

  1. In a medium bowl, add mayonnaise, chipotle powder, and garlic. Zest and juice limes, stir all ingredients together. Add coleslaw and mix to combine.

  2. In a large frying pan or skillet, heat canola oil over medium heat.

  3. In a large shallow dish (such as a pie plate) combine flour, chipotle powder, and salt. Coat tilapia filets on all sides.

  4. Fry tilapia on both sides until golden brown on the outside and flaky inside.

  5. Meanwhile, cook tortillas according to package directions.

  6. When tilapia and tortillas are ready, assemble your tacos! Using a fork, break up the fish into bite sized pieces. Put them on the tortilla, top with slaw and green onions.

  7. Enjoy!
