Almond Flour Chocolate Chip Cookies

I can’t believe we’re in March already, February feels like a blur! The past week has been more crazy than usual, so I’m a little behind on this month’s recipes. But I promised myself I’d post at least 1!

So we have 2 jar picks this month. The first is Almond Flour Chocolate Chip Cookies. They’re GF, but do contain shortening and butter. The second is Upside-down Pineapple Honey Cake. It’s not GF, but could easily be converted.

I’ve made the cookies before, they are easy to whip up and they are AMAZING. I love chocolate covered almonds, and these taste so similar- but they’re sweeter, so they remind me of Almond Joys:  I’m dying to make them with shredded coconut added in this time!

Important notes:

They will not look done when they are finished baking. The recipe says so, but I still didn’t believe they could finish and look so gooey still. Then I realized almond flour is NOT like regular or GF flour. TRUST THE RECIPE! Once they cool they are perfection!

I did half semi-sweet chocolate chips and half milk chocolate chips. I did NOT like the semisweet in these, and prefer all milk chocolate chips. But my husband didn’t have that much of a preference so you decide (:


YOU WILL NEED:

a mixer or large bowl & wooden spoon

A standard cookie scoop (whatever tool/method you usually use!)

A baking sheet



Almond Flour Chocolate Chip Cookies

Preheat oven to 375°


Ingredients:
  • 1/3 C butter, softened
  • 1/3 C shortening
  • 1 C packed brown sugar
  • 1/2 C sugar
  • 1 tsp baking soda
  • 1 tap salt
  • 1 egg
  • 1 Tbsp vanilla
  • 2 3/4 C almond flour
  • 2 cups chocolate chips

Directions:
  1. Beat together butter and shortening for 30 seconds on medium to high speed.
  2. Add sugars, baking soda, and salt. Beat on medium speed for 2 minutes, scraping sides of bowl as necessary.
  3. Beat in eggs and vanilla.
  4. Beat in almond flour.
  5. Stir in chocolate chips.
  6. Scoop small or standard sized balls dough onto baking sheet, bake 6-8 min or just until edges are lightly browned. They may not appear to be set, but DO NOT bake longer. L
  7. Allow to cool, then enjoy!
